This layer of the digestive tract covers and protects the digestive organs.  Without this protective layer, the acid we produce in the stomach to digest food would digest us too.  Without a protective surface layer in which to hold stomach acid, those acids would eat right through the delicate cells of our own bodies.  If they can digest cow’s meat, why not our own?
